  • Linda, a BANT registered nutritionist and nutritional therapy practitioner, brings us this indulgent yet nourishing recipe for dairy free chocolate pots. Perfect for those avoiding dairy or simply looking for a lighter dessert, these rich chocolate pots are made with wholesome ingredients and a touch of sweetness from natural dates. Simple to prepare and beautifully finished with fresh raspberries, they’re a wonderful way to treat yourself or your loved ones this winter. Ingredients: • 1/2 cup (125ml) cashew nuts soaked in 1/2 cup (125ml) water • 2 Medjool dates, stones removed • 100g (3.5 oz) 70% dark chocolate • 1/2 tsp vanilla extract To decorate: •Raspberries Method: 1. In a blender whizz up the cashew nuts, dates and water until smooth. 2. Strain the mixture to ensure a smooth texture, the dates can leave a few gritty bits behind. 3. Place a bowl with broken up chocolate over a pot of simmering water (makes sure the bowl doesn’t touch the water and the water doesn’t boil rapidly). Melt the chocolate. 4. Stir the chocolate and vanilla. Make sure the ingredients are well combined leaving no streaks in the mixture. 5. Carefully pour into expresso cups and let set in the fridge for at least an hour. Serve the pots decorated withraspberries. Indulge in this rich yet wholesome dessert by Linda—it’s dairy-free, naturally sweetened, and perfect for a winter treat. If you have autoimmune thyroid disease, removing gluten may also be beneficial. 2. Balance supplements carefully Nutrients like iodine, selenium, iron, zinc, and vitamin A are essential for thyroid health, but balance is key.
