It's January, but certainly not a Dry one at Witchmark - we're fully embracing Ginuary, starting with the recipe behind our 46% abv Black Lime Gin! Black limes originated in the Persian Gulf and are popular in cookery across the Middle East, bringing a dark, smoky tang to this bold and adventurous gin. Starting with a rich base of juniper and coriander, clove and orris root add warmth and depth, then elderberry and yuzu provide a fruity and zesty finish. Nose: Bright citrus from black lime and yuzu, underpinned by warm clove and the resinous aroma of juniper. Palate: Zesty and vibrant, with a smoky tang of black lime, complemented by tingling Szechuan pepper and subtle herbal notes. Finish: Smooth and lingering, with sweet elderberry and earthy spice rounding out the bold flavours. Perfect in a Negroni or simply served with premium tonic and a slice of lime. Thank you, John! - "Yesterday I was given a tour of Witchmark Distillery in Fonthill, a truly local enterprise with an excellent sustainability ethos. The passion, ambition, and expertise of the team at Witchmark was evident in every aspect of the business. From the barley grown in sight of the distillery, the water drawn from a Fonthill bore hole, and the ‘waste’ product used as feed by a local cattle farmer or sent to a local biomass plant - this is a Wiltshire brand through and through. I highly recommend a tour of the distillery to hear their plans to create a world class whisky, and enjoy the excellent gin and beer they are already producing."
