Among those, Génépy is arguably the closest in flavor to the beloved monk-made liqueur, because génépy (the alpine plant after which this liqueur is named) is the primary herb used to create Chartreuse. ◾ So, what's exactly is Génépy? It is a legendary and intensely herbal liqueur unique to the French Alps, that dates back many hundreds of years. While comprised of a multitude of alpine herbs, the most prominent is a petite and rare variety of artemisia found principally in the high mountains of the Savoy. DOLIN SAS is one of the few remaining producers that still rely on local herbs foraged in summer, and distilled in a venerable old copper alembic. Its gentle sweetness and heady herbal character have pronounced notes of chamomile, sage and mint. Génépy Le Chamois is served on the rocks or with tonic water, and is a welcome addition to hot chocolate.
