Similar to coriander, there are two groups either you love it or you hate it - but why? Some of the key chemical compounds that contribute to truffle aroma include: - 2,4-Dithiapentane: sulfur-containing alkane, being the primary contributor to the unique scent of white truffles - Androstadienone: a pheromone, linked to the characteristic aroma of truffles in general - Phenylacetaldehyde: aromatic aldehyde adding a floral, honey-like aroma - Methional: sulfur-containing aldehyde with potato-like aroma, contributes to the overall sensory profile - Linalool & Geraniol: terpenes that add floral scents, contributing to the overall complexity - 1-Octen-3-ol: the typical mushroom-like scent, enhances the earthy characteristics However. although all these compounds can be synthesized in the lab no artificial mixture can compare to the rich & unique natural aroma of truffles! BTW, responsible for how we feel about truffles is the androstadienone - about 25% of the people cannot stand this pheromone, which is also found in the sweat of mammals!
