Fighting Food Waste with Artificial Intelligence: AI Saves Money and the Planet Food waste is a global issue with staggering environmental and economic costs. In the US alone, a third of produced food goes uneaten! Thankfully, innovation is emerging to tackle this challenge, and it involves artificial intelligence (AI). AI is on a plate to help. Companies like Winnow are using AI-powered cameras to analyze restaurant discards. Imagine: the system recognizes a half-pan of lasagna versus a banana peel, helping restaurants identify over-ordered items and adjust portion sizes (looking at you, giant breakfast pastries!). On the supermarket side, Afresh uses AI to analyze mountains of sales data. This data reveals hidden patterns, like which types of onions sell faster or how Easter egg sales impact bell pepper purchases (omelet anyone?). With this knowledge, stores can optimize their ordering, reducing spoilage and wasted resources. The benefits are plentiful. AI helps businesses save money by minimizing food waste. It also provides valuable customer insights, allowing for better inventory management and a more sustainable food system. But AI isn't a magic bullet. These systems require substantial data to function, and our ingrained desire for endless variety can still contribute to waste. There's hope on the horizon. Supermarket chains are collaborating on food waste reduction initiatives. Exciting new technologies like edible coatings for produce and apps connecting consumers to discounted groceries are emerging. The fight against food waste is a shared responsibility. AI is a powerful tool, but we all have a role to play.
