Food waste continues to be a significant challenge across various industries, particularly in large-scale event organizations. While AI technology is often touted as a potential solution, my recent experiences with two major event organizers, where food waste levels were notably high, prompted me to question its effectiveness as a solution. In my research, I spoke with Liuba Marchionne, a Sustainable Food Systems Advisor with extensive expertise in waste reduction technology, and Kruti Kattige, an MSc Sustainability & Management graduate from University of Bath. Together, we discussed the limitations of AI in addressing this issue. Limitations of AI in Reducing Food Waste: 1. Data Accuracy Challenges: AI relies on precise inputs, yet food waste data can be inconsistent due to various factors. Food types are often mixed when discarded throughout the day, and variations in bin types can impact measurement accuracy. These inconsistencies can distort AI-generated insights, reducing its effectiveness. 2. High Costs: Implementing advanced AI systems can be prohibitively expensive, making them inaccessible for many businesses. 3. Human Factors and Time Constraints: In fast-paced kitchen environments, staff may not always have time to input precise data, and human error can lead to inconsistencies. This affects the data that AI uses, limiting its accuracy and impact on waste reduction. 4. Complex Scenarios: AI can struggle with variables like ingredient shortages and seasonal changes, making it less adaptable in real-world situations. A More Effective Approach: To combat food waste effectively, these strategies might be helpful: 1. Enhanced Forecasting: Utilize cost-effective tools that combine historical data with real-time insights for better planning. 2. Human-AI Collaboration: Integrate AI insights with staff input to refine portion control and enhance decision-making. 3. Smaller Portions & Donations: Encourage event organizers to offer smaller portion sizes and ensure surplus food is donated to charities.
