Traditional chlorine treatments often fall short, as they cannot effectively eliminate salmonella before packaging. To address this challenge, we must pivot towards more eco-friendly and less residual disinfectants, such as peracetic acid. Although we see varying concentrations ranging from 5% to 23%, achieving the right dosage is crucial. This requires a technical team that is both knowledgeable and skilled; without this expertise, we risk producing chicken that exhibits undesirable whitish and black spots, or worse - dry texture.
