Anyone else love experimenting with new recipes or even your own existing recipes? Here is a favorite from one of our very own Sulli'ns. Grilled Pork Loin and Jalapeno Pineapple Salsa: Ingredients: For the Pork: 1 Pork tenderloin 1 Teaspoon ground cumin 1 Teaspoon chili powder 1/2 Teaspoon red pepper flakes 1 Tablespoon olive oil 1 Teaspoon salt & pepper For the Salsa: 1 can pineapple rings 1/2 Onion cut into thick slices 2 Halved jalapeños 1 Juiced lime 2 Tablespoons cilantro Salt & pepper to taste Step 1: Coat the pork with olive oil, cumin, chili powder, red pepper flakes, salt and pepper. Step 2: Place on grill and cook until done, around 20 minutes on 450 degrees. Step 3: Coat pineapple rings, jalapeño and onion in olive oil and place on grill until soft. Step 4: Place fruit/vegetable mixture in a blender with lime juice, cilantro, salt and pepper. Blend until salsa consistency is achieved. Finding time to cook can be challenging, but easy recipes like this Taco Rice bake make weeknights more manageable—and delicious! 🌮🍚 Here’s how I made it: Browned 1 lb ground beef, drained it, and added it to an oven pan. Mixed in 2 cups instant rice, a packet of taco seasoning, 1 cup salsa, and 2 cups beef broth. Added in some corn and black beans for extra flavor (but feel free to customize!). Covered with foil and baked at 350°F for 30 minutes. Topped with shredded cheese and queso, let it sit for 5 minutes, and served it with tortillas or chips. 🧀🌽 It’s hearty, customizable, and perfect for a busy schedule. This recipe makes 4-5 servings but can easily be doubled. It's the perfect picnic or beach day snack—just don't forget the tortilla chips!🥰 Preparation Time: 10 minutes Cook Time: 0 minutes Ingredients 1 ripe mango, peeled and diced🥭 1 ripe avocado, peeled, pitted and diced🥑 1/2 red bell pepper, cored, seeded and chopped 1 small red, white, or sweet onion, chopped🧅 1/2 jalapeño, seeded and diced (optional)🌶️ 1/4 cup chopped fresh cilantro or parsley Juice from 2 fresh limes Directions Fold all ingredients together gently in a non-reactive bowl. COOKING WITH GUINNESS STOUT Most people are at least familiar with what Guinness Stout is: the legendary black beer of Ireland (it isn’t actually black — it’s deep ruby red but you need strong light to see it).
