“Smile… and carry on.” — Liang of Red Red Botak Head It’s simple advice, but it’s been my mantra for 11 years in the wild world of F&B. Some people think I’m reckless for opening restaurants with no visibility or frontage—considered key to success back in the day. They say it’s business suicide. I just smile and carry on, knowing I’ve prepared well and am willing to make the sacrifices needed to thrive. A recent example: on January 8th, I got word the main entrance to my restaurant, Red Red Botak Head, would be closed. With the place already tucked away on a rooftop, this felt like a death sentence. I argued and reasoned that an inaccessible restaurant was certain death, but it didn’t change anything. Within 48 hours, only a minor entrance remained. I smiled, and carried on. I doubled down. We boosted our marketing, created quirky content, and catered to customers in unique ways—all with a wide smile. By mid-August, we matched last year’s revenue and are on track to close the year on a high. Challenges are part of the journey. What matters is how we face them. Some rage and complain in the face of whichever deity they choose to. I just smile. There's no room for ego or rigid roles in a tiny space. You need a team that can pivot faster than you can flip a quesadilla. Align or decline. I've learned this the hard way - talent isn't everything. If your team isn't in sync, it doesn't matter how skilled they are individually. Your team has to vibe together under pressure. Every role matters. From the person taking orders to the one plating the food, each position is crucial. Respect that, and make sure your team does too. Cross-train. Make it a priority to train each team member for every role. This builds empathy and respect, improves communication, and ensures your team can adapt to any situation. Plus, it's a great way to find hidden talents and future leaders. We proved that great hospitality doesn't need fancy decor or white tablecloths. It’s funny how you can find inspiration in the most unexpected ways.  I’ve been watching Top Chef since season 1 – over 20 years of cooking inspiration. Over Christmas, I was home sick and revisited this long-loved show. The episode called Restaurant Wars, when contestants are tasked with creating a fully functioning pop-up restaurant in just a few hours, got me thinking... Restaurant Wars is just like a start-up on steroids. It involves everything from conceptualizing a restaurant’s theme and designing the menu to managing the kitchen and front-house operations.  It is about delivering under tight time constraints and with limited resources. It’s a true test of participants’ skills, teamwork, and ability to handle stress. And, ultimately, it is all about how to leverage the right people for the right tasks to get the award. It’s the same kind of intense pressure and high stakes almost all organizations experience.  Whether it’s crafting a pop-up restaurant, integrating two organizations, launching a new product or start-up, or executing a strategic plan, the recipe for success is strikingly similar: resourcefulness, adaptability, collaboration, quick problem-solving, and a relentless focus on customer experience.  💬 Where do you find inspiration? #Leadership #Teamwork #TopChef #StartUps #Execution

Two powerhouses in the same show, this a definite watch! I always walk away smarter after my conversations with Troy Hooper and Jim Balis. 2 parts I particularly like: Around 9 minutes, Jim Balis talks about restaurant chains culture.
