Flavor Compound ID for Whiskey The conclusion: Twenty sulfur compounds were positively identified in the unaged whisky through sequential heart-cuts of the 16 sulfur fractions. Additionally, eight formulas for unknown sulfur compounds could be obtained. PCA data proved to be a remarkable tool for distinguishing between unaged and aged whisky, as well as two different whisky samples. Fourteen sulfur compounds could be characterized as key sulfur compounds and determined at sub-ngmL−1 to ngmL−1 levels. Wow, quite an impressive setup. They used an LTM (Low Thermal Mass) Series II for rapid heating on an Agilent 7890 with an SCD, NCD, 5975C MSD, a Capillary Flow Technology (CFT) Deans switch, two CFT splitters, and retention time locking. As if that weren't enough, they used the CFT devices to implement backflushing. Whew! 😎 Not familiar with LTM? Check it out at http://bit.ly/4gwMMFy.
