👨🍳 What fun it was to host the chefs & directors from ✶ ✶ ✶ ✶ #Chicago's own Four Corners, which operates exceptional, innovative bars & restaurants across Chicagoland, including Ranalli's Lincoln Park, Federales, Schoolyard, Kirkwood, and Benchmark. 🍔 🍕 🍻 We loved hearing their feedback on our cultivated products 🌭🍝🍕→ 🎯 "Consumers would jump on an animal-free animal product!" 🎯 "I'm all over this. I would order this weekly and would love to be on the ground floor of this food category." 🎯 "If I served 20 of these to customers, 20/20 would love it and wouldn't know it wasn't a conventional bratwurst." 🎯 "Love the 'Tank-to-Table' approach!" 🎯 "I've been following a strict carnivore diet for the past fifteen months and I'm a huge advocate of meat-based diets. If an optimal source of nutrition can be offered to consumers in parity with the current costs of traditionally raised meats, but without the negative ethical implications of factory farming, I suspect reasonable people are going to have a hard time making any other purchasing decision." Thank you again to team Four Corners for joining us and sharing your culinary expertise and insights! 🌟

🌱🍗🦁 IMPOSSIBLE FOODS TARGETS CONVENIENCE WITH NEW LION KING NUGGETS, CORN DOGS AND PRES-SEASONED BEEF Impossible Foods is channelling its inner Mufasa with a new format of its vegan chicken nuggets, which are shaped as beloved characters from Disney’s The Lion King franchise. The nuggets, which come two months before the premiere of Mufasa: The Lion King, are part of a new line of products released by the Californian plant-based meat pioneer, as it looks to meet families’ need for convenient options. These include the kid-friendly Corn Dogs, which encase its signature hot dogs wrapped in a cornmeal batter, and Meal Makers, a two-strong range of flavoured Impossible Beef. They represent the company’s first new product announcements in a year, following the aforementioned hot dogs in December 2023. The development comes as Impossible Foods has taken up the second-highest share in US retail in the segment, according to IRI data, with its beef and nuggets among products that are the bestsellers in their respective categories. “We’ve been very proud to work with Disney to serve Impossible products across their properties for the past four years, so it was a natural next step to collaborate on a new offering in the grocery aisle,” said Impossible Foods CEO Peter McGuinness. The Lion King Nuggets contain 13g of protein and nearly 4g of fibre per 100g, as well as 60% less saturated fat than conventional chicken nuggets. Additionally, they require, 44% less water and 49% less land to produce, while emitting 36% fewer greenhouse gases. Meanwhile, each Impossible Corn Dog has 9g of protein and 40% less saturated fat than conventional beef versions. When was the last time you tried plant-based chicken nuggets? What did you think? Because in a recent blind taste test -- the largest of its kind, with 1,150 American omnivores -- plant-based nuggets have achieved taste parity with their animal-based benchmark. And it wasn't just one brand. This is new -- Historically, plant-based alternatives have fallen short somewhere on the sensory experience. Parity is a meaningful signal of progress. And unlike conventional meat, plant-based meat can continue to improve its sensory performance. This is exceptional -- In most categories, most plant-based analogues still fall short somewhere on the sensory experience. Nuggets are still the exception and not the rule. But this suggests other formats *might* be able to get there too. This is a critically important step -- The single most important purchase driver in most food & beverage categories is taste. Sensory parity is a necessary (but insufficient) first step. Price parity is another important step (note what's happening with plant-based milk in Europe here). Health parity is also an important step (note what's happening with Beyond IV and its recent certification from the American Heart Association). Alternative Proteins have been in a rough patch lately, but there real signs of life here. Most importantly, brands are conducting the right research to understand barriers to adoption and they are moving with speed to overcome them. My take: They're down but not out. Watch this space. #food #innovation #sustainability

I’m here to make goat meat an Aussie fave! Ever wondered why goat meat isn't as mainstream as it could be in Aussie kitchens? One challenge we face is its incredible leanness - on first glance that sounds pretty good right? Especially if you’re looking for a healthier protein, but being lean for goat means it is best enjoyed "on the bone," and slow cooked to be able to deliver a rich flavour profile and succulent texture. And look I get it! Some Aussies prefer their meat sans bones, but with goat, it’s really hard to get a good size piece of boneless meat that can be used in the same way say chicken breast or pork fillet is. For some as well, it’s a mind over matter situation, they’re just not used to eating food off the bone so much - a T Bone or lamb chop might the limit of their bone eating abilities. The boneless trend is real, and it's a challenge for goat to fit into this preference in some groups in Australia. My mission? To show you the beauty of goat, on and off the bone. There are ways for boneless goat to be worth it, and tasty, but as well you have to consider the cost of doing all that to a butcher and processor. One of the reasons lamb can often be a higher price point is that it simply is more fiddly to remove the cuts from, and time is money! I think i’ve nearly perfect my smoked rolled goat leg ‘ham’ which is a great way to use goat off the bone and keep a tender texture and I can’t wait to share the results of all my experimenting! #ButcherGirlAlison #Goat #GoatMeat #AustralianGoat #GoatLovers #LoveGoat #LeanMeat #LeanMachine #Sinew #MuscleMatters #AussieFood #AussieProduce #Butcher #ButchersOfInstagram #LoveButchery #ButcherConsultant #EatGoat #GetYourGoat #LeanProtein #OnTheBone #ButcherLife #ButcherIndustry #EatAustralian
