Back in December 2022, SevenFifty Daily posted about wine trends to watch for in 2023. Their leading one was regarding sustainability: "There was a time when consumers were unconcerned with monocropping and chemicals, and cares dissolved with the uncorking of a heavy glass bottle. It's Cava Discovery Week! Spanish producers are taking up the fight vs Prosecco and Champagne by focussing on sustainability. According to The Drinks Business, "organic Cava production grew by 24.59% in 2024, and Penedès, Cava’s main producing region, announced its goal of reaching 100% organic production by 2025." These are interesting numbers, and industry experts - such as Europe Best Sommelier Salvatore Castano - say that Cava is ready to up its game. What do you think?
