I can disappear for months and my restaurants still thrive. You might think that’s impossible in the food industry. After all, it's a people business, right?  How can everything run smoothly without constant oversight? The secret isn’t about systems or technology (though those help).  It's about the people. I don’t just hire based on resumes. I look for potential, for heart. I've hired dishwashers with dreams of being a chef. I've hired servers who are shy but love people. I've hired hosts who stutter when nervous. I've hired people with big personalities. I've hired cooks who burnt toast once. I've hired people with tattoos. Why? Because these are the individuals who rise to the occasion. When the chips are down, they step up. They don't just follow a manual.  They bring their unique spark to the table. But when push comes to shove, they rise to the occasion. Their spirit. Their dedication. Their heart.  That’s what makes the difference. It’s not about perfection. It’s about potential.
