🧺 2012 We open the Metro CareRing Market, a self-select pantry that allows people to choose their own food instead of receiving a pre-packaged or standard bag of groceries. This switch creates less waste, introduces people to items they might otherwise have access to, and offers people more control over their food choices. With the holidays approaching, I wanted to share a quick, easy, delicious sweet potato mash recipe. If you don't like sweet potatoes, work on your taste buds... or just add bacon. During the Edible Reno-Tahoe Magazine interview, there were more recipes I wanted to share, but this is a fan favorite. Our family has requested this for two different Thanksgiving meals already. Enjoy! 4-8 whole sweet potatoes (roughly 1/2 swt. potato per person) 2-4 jalapeño peppers, diced 1 package of uncured bacon ½ cup coconut cream and/or grass-fed dairy butter Sea salt and black pepper, to taste Preheat oven to 385 degrees F for 12 to 14 minutes. Put bacon on baking sheet and bake until crispy. Remove, drain, and chop. Turn up heat in oven to 400 degrees F. Place the sweet potatoes on a baking sheet and add to preheated oven. Cook for 40 to 45 minutes or until the potatoes are fork tender. Remove from oven and set aside to rest, about 5 to 6 minutes. Once the potatoes have cooled enough to handle, cut them in half and scoop the inside into a bowl. Add the coconut cream and jalapeño peppers. Stir well to combine. If you want creamier potatoes, use an immersion blender or hand mixer. Fold in half the bacon. Transfer mixture to a serving bowl and garnish the top with remaining bacon. Season with sea salt and black pepper. Serve immediately. https://lnkd.in/gfN9T-MB

I’ve always wondered how our office cafeteria manages food waste. Last week, our Cafe Manager Bert Ongkeo shared an eye-opening session on the topic. Here are some learnings I’ll be taking with me: 🍽️ Minimize overproduction: Prepare meals in smaller quantities to avoid overcooking and food waste. 🥣 Repurpose leftovers: Leftover vegetables, meats, and bones can be transformed into soups, sauces, and purees. (We even got to try a delicious vegetable pho made from leftovers—it was incredible!) ❄️ Freeze and reconstitute: Surplus fresh fruits and vegetables can be frozen for later use, while stalky veggies can be revived with warm water. 🥩 Marinate to extend shelf life: Marinating meats not only enhances flavor but helps them last longer. Major thanks to Bert for such an eye-opening experience, and a great reminder that even small, thoughtful actions can make a big impact on reducing waste.
