Katharina shared, “𝘛𝘩𝘦 𝘪𝘯𝘵𝘦𝘳𝘦𝘴𝘵 𝘪𝘯 𝘰𝘶𝘳 𝘴𝘰𝘭𝘶𝘵𝘪𝘰𝘯𝘴 𝘢𝘯𝘥 𝘩𝘰𝘸 𝘸𝘦 𝘤𝘢𝘯 𝘤𝘰𝘯𝘵𝘳𝘪𝘣𝘶𝘵𝘦 𝘵𝘰 𝘵𝘩𝘦 𝘱𝘳𝘰𝘵𝘦𝘪𝘯 𝘵𝘳𝘢𝘯𝘴𝘪𝘵𝘪𝘰𝘯 𝘸𝘢𝘴 𝘦𝘯𝘰𝘳𝘮𝘰𝘶𝘴.” Additionally, Katharina participated in the panel discussion, “𝙏𝙝𝙧𝙞𝙫𝙞𝙣𝙜 𝙞𝙣 𝙩𝙝𝙚 𝙉𝙞𝙘𝙝𝙚: 𝘽𝙞𝙤𝙢𝙖𝙨𝙨 𝙁𝙚𝙧𝙢𝙚𝙣𝙩𝙖𝙩𝙞𝙤𝙣, 𝙈𝙤𝙡𝙚𝙘𝙪𝙡𝙖𝙧 𝙁𝙖𝙧𝙢𝙞𝙣𝙜, 𝙖𝙣𝙙 𝙏𝙚𝙭𝙩𝙪𝙧𝙞𝙯𝙖𝙩𝙞𝙤𝙣 𝙎𝙤𝙡𝙪𝙩𝙞𝙤𝙣𝙨,” alongside Drew Selwood , Maya Sapir-Mir, and Winston Sun, with excellent moderation by Stacy Pyett. The discussion highlighted how alternative protein technologies are converging, while facing critical challenges in scalability and cost reduction. Katharina emphasized the essential role of hybrid products and stabilizers and provided some insights into consumer acceptance, while other panelists explored exciting advancements in yeast fermentation, molecular farming, and microbial biomass production. The conversation reinforced the immense opportunities for collaboration and innovation in this rapidly evolving sector, particularly in sustainable and scalable solutions.
