𝗠𝗼𝗻𝗶𝘁𝗼𝗿𝗶𝗻𝗴 𝗼𝗳 𝗽𝗿𝗼𝗰𝗲𝘀𝘀 𝗰𝗼𝗻𝘁𝗮𝗺𝗶𝗻𝗮𝗻𝘁𝘀 𝗶𝗻 𝗳𝗼𝗼𝗱 During the production process, so-called process contaminants can form in food as an undesirable side effect. These are formed, for example, during fermentation, smoking, drying, refining and heating at high temperatures. Sometimes these unpleasant substances are harmful to health, such as acrylamide, which can be produced during coffee roasting and is considered to be mutagenic. Another example are polycyclic aromatic hydrocarbons (PAHs), a group of substances that includes around 250 different compounds. They are formed when food is heated to high temperatures, e.g. during frying and deep-frying, and are potentially carcinogenic. For the most relevant representatives, maximum levels are set for numerous product groups in EU Regulation (EU) No. 2023/915, which must be complied with. Also 3-MCPD, its fatty acid esters and glycidyl esters are also heat-related contaminants in food that are undesirable due to their harmful effects on health. Since 2021, there have been specific maximum levels for various oils and fats, as well as for baby food, in the same regulation mentioned above. 𝗧𝗵𝗿𝗼𝘄𝗯𝗮𝗰𝗸 𝗧𝗵𝘂𝗿𝘀𝗱𝗮𝘆 Throwback to the days when some shocking chemicals were commonly added to our foods! 🕵️♀️ Here are a few that have been banned or restricted due to serious health concerns: 1. **Cyclamate:** Used as an artificial sweetener until it was banned in 1969 after being linked to cancer in lab animals. 2. **Red Dye No. 2 (Amaranth):** A popular food coloring banned in 1976 due to cancer risks. 3. **Potassium Bromate:** A dough conditioner still used in some places but banned in many countries because it can cause cancer. 4. **BHA (Butylated Hydroxyanisole):** A preservative restricted in several countries due to its potential to cause cancer. 5. **Lead Acetate:** Once used as a sweetener, now banned for its toxic effects on the nervous system.
