In start-up mode (see previous post), I’ve been reflecting on why I believe there is a market for a new approach to wine. Intuitively, wine from locally sourced honey aligns with a few things our modern world craves, namely: 1. Consumers are more health conscious… NZ honey is highly regarded for its health benefits  2. Chemicals in food - blagh! … honey wine is a natural, ancient craft    3. I've known Bryn Ferris for years now and seen them grow from a small London based brand to now absolutely crushing it in the UK, and while being obsessed with 100% natural plant-based ingredients. Here's what has impressed me about this company: Taste - The product tastes incredible compared to other options in the US (not going to name drop) that I’ve tried. It appeals to a wider audience, and their taste is the reason they have grown the entire UK Whole Foods Market beverage category (by 7.5%) with only 2 products. Clean Ingredients - Now more than ever consumers want clean labels. Grounded has less than 10 ingredients, and all of them are real foods like madagascan vanilla, coconut cream, and organic pea protein.  UK Success - The Grounded team has rapidly scaled their products in the UK. In UK Whole Foods they are 6th in sales volume in the entire drinks category, not just protein drinks. I'm usually not a Mint Chocolate kind of guy, but this is my GO-TO protein m*lkshake after a workout or hike. A slow but steady shift away from commodity crop driven, refined and calorie dense food, personified by but not whatsoever limited to fast food fries is a good signal. Nothing too risky about an occasional “small” (used to be the only!) size fast food fries order (I order mine no salt added). But we went WAY overboard “SUPER SIZING” our nation in ALL restaurants - fast food to fine dining. A shift away is a good sign. But what we replace McDonald’s fries and fast food with isn’t going to be impactful unless it sees us cutting down on calories and salt (eg going from fast food to home made cookies is not serious progress for metabolic health). We need a slow but steady shift up in fruits and vegetables that will be reflected in tripling our farmland dedicated to “specialty crops” (they should be more along the lines of our usual crops) going from 4M to 12M acres. At 4M we can barely feed each American one cup of fruits and vegetables per day, for reference. Ie - we eat/drink a LOT of commodity crop, US Farm Bill driven CRRAHP (calorie rich, refined and highly processed) food concoctions and beverages. Good to see that we may be backing off CRRAHP foods that risk - but we need to also move more towards “foods that fix”. And we will need to see policy changes from federal (Farm Bill) to our hopefully more “healthy food only in home zone“ culture shifts. Let’s do this America! Less is more. Every holy book in the world spoke about the power of fasting. There is so much junk out there in the world and in CPG, it is astounding. Scrolling through LinkedIn after Expo West - I am reminded - growing your own food and eating a natural & organic whole food meal with your family in the late afternoon or evening is probably the single best thing you can do for your health. All of the packaged food in the world will never compare, not even 10%. Before that meal, you probably just need some liquids and fruit. The CPG industry by and large, is a sham! Self discipline is the key to health, not a packaged product!

Functional foods are the fashion centre of the supermarket. Fermented foods are the most fashionable of all (according to quotes in The Grocer). I am not a fan of food fashions. I am a fan of great food and drink that has incidental but deep benefits for health. Many of these foods are obviously deeply rooted in tradition and the longstanding human need to preserve our food. There are fermentation traditions in many countries and it is heartening to see how much interest in fermentation has grown in the UK. The Cultured Collective has its roots in Australia, where Nicola Peters was working, but also with a Korean colleague who was excited to see her interest in - and experiments with - making her own Kimchi. An exchange of knowledge followed and there have been many such exchanges since. As the article also states... "Unlike many fashions, though, these foods have the power to go well beyond a fad. After all, they have been celebrated for generations in other countries. See kimchi in Korea, sauerkraut in Germany and miso in Japan." Great to see a traditional process like fermentation, with its associated benefits for human health, lead the excitement around functional food. 📸 Photo is the first batch of Kimchi made by Nicola when she returned to the UK and established the business. At first on a market stall, then in independent retailers and the likes of Planet Organic Ltd and Whole Foods Market, then on Ocado Retail and now growing fast. I have worked with ferments for 5 years, fermentation in some form for 17 years (olives go through a fermentation process) and I'm more excited than ever about the future of fermentation in the UK.
