You know how in 2022 and 2023 everyone started showing off their Covid projects? Ours took a little longer than most, but we are finally ready to talk about it! In 2020, it all started with Alexandre Granzer-Guay, MASc., Stephanie Weyrauch, and myself drinking a lot of wine, and Alex suggested, “We could just try to make this ourselves.” That’s why, if you’ve had to endure a conversation with me recently, you’ll know a common topic is making wine. We decided to set out to make wine that we liked and thought was cool, which is how we landed on natural wine with hybrid grape varieties native to North America. Your next question is probably: what is natural wine? As a concept, it is wine made from grapes and nothing else. It relies on organic/biodynamic growth, natural fermentation where we let the grapes do their own thing with the naturally occurring yeast present on the grapes, no added chemicals or stabilizers, and low or no intervention in the winemaking process. This means that every year, you can get a unique wine without much control over how it gets there. That’s how we ended up with Bon Sang! Wines. Four years of trial and error, and graduating from our in-laws' basement making wine for fun, to a proper facility in Vineland, has allowed us to finally put our wine on shelves!
