Reading a history of a pre-modern Europe. Turns out people ate a lot of salted cod. Countries fought wars over the control of Atlantic cod fisheries. Most of the time, the fish was still spoiled when it reached consumers. Made me grateful for modern food preservation techniques; reminded me of the power of technology as a force to improve human life. Shout out to the entrepreneurs I know like Manik Suri at GlacierGrid, Benjamin Rubin at SnoFox Sciences and Artyc for your work on the cold chain so that I can continue to eat delicious, practically fresh Pacific salmon instead of rotting salted cod. And shout out to the many entrepreneurs I know making great food, like Jeni Britton, or exploring alternative foods and production strategies so our palates can continue to evolve as we address climate change like Jesse Horwitz Heartee Foods Annie Ryu Omeat Ali Khademhosseini Nature's Fynd among many others.
