Zero-waste restaurants shouldn't exist. Every restaurant should be zero-waste by default. We shouldn't need to label restaurants as 'zero-waste', as it should be the standard system. The excess waste should not be the norm. Operating a kitchen with minimal waste should be the normal thing in this industry. No zero-waste restaurants. If you are a non vegetarian family - keep 10 boiled eggs or chicken on your dining table when you eat dinner. Pick randomly and eat those first. Make sure your kids do the same. Then serve dinner. If you are a vegetarian family - do same with Stir fried Panner, tofu, some boiled chana and greens. Make sure you eat those first, your kids eat those first. Then serve your dal rice roti. Keep buttermilk and curd as well on the sides. Don’t keep farsan or namkeen on the dining table ever.
