Texture is one of the most important factors when it comes to the enjoyment of food. However, it can be one of the most complex attributes to get right! In this White Paper, Mark Auty, Fred Gates and James Spinks (three of our resident expert scientists!) discuss the best ways to navigate this complex challenge and explain how using both microstructure and physical analysis techniques can help achieve success. We are now accepting submissions for Fouling and Cleaning in Food Processing Conference 2025! The interdisciplinary conference will be held at the Penck Hotel in Dresden, Germany, on March 25-27, 2025. This interdisciplinary conference aims to facilitate the exchange of experience, research results and knowledge among engineers, researchers, scholars and industry experts from across the globe. Topics of interest include fouling, cleaning and disinfection in food processing, hygienic design, and resilient food production processes, as well as related aspects of food safety. We welcome submissions in both practical and theoretical approaches, case studies, simulation, modeling, monitoring techniques, automation, or new inventions. Submit your abstract and help shape the discourse on "Food Safety and Net Zero"! The deadline for submitting entries is September 30, 2024. Series - "Case studies in food product development" (total 20 chapters) Chapter 9: FROM BASIC RESEARCH TO MARKETABLE PRODUCT - SUCCESS AND FAILURE OF INSTANT BAKED POTATOES Again, an interesting case study! "In this chapter, possibilities for solving a major industrial problem were explored systematically, and the design process followed to produce an acceptable product; but ended in failure because of local managerial and commercial circumstances. In PD Process diagrams there are stages with their activities, outcomes and decisions, and usually they are described as occurring inside a company. But often the activities are outside the company, especially in medium- and small-sized companies who do not have the people, resources and knowledge to organise the activities. The activity can be specific, such as a consumer survey or design of equipment, but it can be major such as the development or the launching of the product. For a smaller company, it can be the total product development project" #foodproductdevelopement #casestudy #RnD

In my time working in international fisheries policy in the Pacific, I ran into numerous cases where countries were searching for solutions like those outlined in the paper below. The interest in fair division problems and cake cutting isn't purely theoretical, but the solution procedures for these problems have numerous real world applications, from fisheries allocations, sea-bed rights and boundary disputes, to climate change negotiations. For this reason it is important to monitor the theoretical literature to identify material for new policies, to avoid repeatedly proposing the same failed solutions in the hope that the outcome might be different (it won't be the mathematics says so). This new paper reports on some interesting new developments in fair cake cutting (unfortunately) the results, in this case, apply to at most 4 players, but one hopes can be extended to more players with more effort. https://lnkd.in/dMhVEjB7 #fairdivision #cakecutting #resourceallocation #economics #mathematics #computerscience

Our recent article,"A circular economy approach to design a citrus supply chain network", has been published on Annals of Operation Research. This article delves into supply chain network design for citrus fruits by considering principles of circular economy. We formulated a mixed-integer linear programming model along with exact and meta-huristic algorithms to solve the model. I believe it will resonate with anyone interested in the real-world application of Operations Research. A special thaks to my co-authors Dr. Alireza Goli and Dr. Mostafa Hajiaghaei-Keshteli without their support, this wouldn’t have been possible. I invite you to give it a read and share your thoughts!
