15 Minute Meatloaf is the truth! This recipe has been floating around for years, but I tried it tonight and I am cosigning. Is this going to be the most magnificent meatloaf ever? Probably not. But when you have a craving for comfort food like mom made, this will get it done, and for busy folks, it's a winner. Real simple: 1lb ground beef 1/2C dry bread crumbs 1 large egg 2Tbsp ketchup 2Tbsp yellow mustard 1pkt onion soup mix 1/4tsp salt 1/4tsp black pepper 3 or 4 shakes of Worcestershire sauce Mix all ingredients thoroughly, and form into a loaf. Place into a microwave safe baking dish and microwave (yes I said that,) for 15 minutes or until it reads 160deg in the center. In another bowl combine and mix well: 3Tbsp ketchup 2Tbsp brown sugar 2Tbsp cider vinegar Pour this glaze on top of your meatloaf once it's cooked in the microwave. You can microwave, or bake (at 425deg) for an additional 10 minutes to set the glaze, or just use your high broiler. Once it's done, let it rest for 10-15 minutes before serving. Share this with anyone who just doesn't have the time to spend 2 hours in the kitchen after a long day.
