TACO TUESDAY TACO CUPS Ingredients: 2 slices Sargento reduced fat cheese slices* (1/2 Lean) 4 oz raw 95 to 97% lean ground beef, 3 oz cooked (1/2 Lean) 1 tsp taco seasoning of choice (2 Condiments) Additional Toppings: Lettuce and tomatoes (subtract from your Greens) 1 tbsp sour cream (1 Condiment) Directions: Preheat oven to 375 degrees. Brown ground beef over medium high heat for about 5 min or until cooked thoroughly. Drain any excess fat. Season with taco seasoning and stir until combined. Set aside. Line a baking sheet with parchment paper. Lay cheese slices on parchment paper and bake 6 to 7 min or until bubbly. Let cool on the baking sheet for about 1 to 2 min. Carefully pick up melted cheese slices and place on the bottom of a muffin tin. Let cool for 10 min. Place half the ground beef in one cup and the rest in the other cup. Stir in flour, then gradually whisk in milk until thickened. Preheat oven to 350°F (175°C) and lightly grease a muffin pan. 2. Texas Twinkies - Jalapeños Stuffed with Smoked Brisket Ingredients: - 12-16 extra-large jalapenos - 16 ounces cream cheese - 1 lb smoked brisket - 1 lb chorizo (optional) - 2 cups smoked gouda, shredded - ½ cup Jeff's original rub - 12-14 slices thick-cut bacon - Jeff's original sauce Instructions: 1. Cut a "T" into each jalapeno pepper by cutting halfway through the pepper just below the stem, then cutting a slit from the top of the "T" to the tip of the pepper. 2. Carefully pry open the pepper and deseed and devein the peppers with a thin, sharp knife, then rinse them under cold water to remove any remaining seeds. 3. Make the stuffing mixture using 2 cups of pulled brisket, 16 ounces of softened cream cheese, 2 cups of shredded smoked gouda, and 1/2 cup of Jeff's original rub. Mix well. 4. Stuff the peppers with the stuffing mixture. 5. Stretch thick slices of bacon then wrap a single piece around each pepper. Secure with a toothpick. 6. Set up the smoker for cooking at 225°F with indirect heat. Use pecan wood for smoke, and if your smoker uses a water pan, fill it up. 7. Cook peppers directly on the grate for about 3 hours or until the bacon has a good bite-through and the peppers are soft to your liking. 8. When the peppers are ready to eat, glaze them with thinned barbecue sauce and crank up the heat to 350°F for 15 minutes. 9. Serve immediately. Thyme - 4-blend shredded pizza cheese or your favorite cheese, grated 👩🍳 Instructions: 1. Put the flatbread on stone, screen, or pan (a bit of olive oil on the bottom will make it crispy). 2. Cheddar Parmesan Crisps Recipe from our very own Registered Dietitian, Tina! 1 cup each of shredded cheddar 1 cup grated parmesan cheese Mix in a bowl. Then add 1⁄2 tablespoon Ranch dry seasoning and stir to combine. Scoop scant tablespoon-sized heaps of the cheese mixture onto a parchment paper lined baking sheet, making sure they are separated 2 inches apart to allow the cheese room to spread. Bake in a preheated 400 oven for 5-7 minutes or until edges are brown. Watch the oven carefully as it can quickly burn. Cool in the pan slightly and transfer each crisp onto a paper towel lined pan. Store in an airtight container. Pair with cottage cheese. Spice them up by adding jalapeño on top before baking or add cayenne pepper. Instead of dry ranch powder, substitute everything bagel seasoning. (Shredded parmesan cheese can burn easily, so grated is better for this recipe).
