Mundo Novo is a varietal that many people love to hate, but why do we love it? Known for its high yield and natural resistance to many diseases, it is popular among coffee growers for its reliability and durability. Most importantly, it requires less fertilizer, making it more sustainable and cheaper to produce. This always-red varietal is the result of a natural crossing between the Sumatra and Bourbon cultivars. In the field, Mundo Novo is a rustic, tall plant with a thin stem. Plantations above 800 meters in altitude produce the best coffees, and it adapts well to climate variations. Therefore, it is present in all coffee-growing regions in Brazil and can produce a variety of flavor profiles. These are the fruits of the carob tree that grows on our land in Portugal. The tree is named after John the Baptist from the Bible, who, according to legend, sustained himself on its fruits. In Portuguese, the tree is called "Alfarrobeira". In recent decades, the fruits in Portugal mostly ended up in animal feed, but today the legume is considered a new superfood. It is rich in proteins and fiber and, thanks to its high sugar content, serves as a low-calorie chocolate substitute. My absolute favorite dessert is Tarte de Alfarroba. I highly recommend it. You can also make tea from the dried, crushed pods. Harvest time is in early autumn, when the pods, which can grow up to 20 centimeters long, are dark brown and ripe. Most of us are already familiar with the flour made from the seeds of the carob fruit. Since it is flavor-neutral, it is used as a thickener in countless foods, such as in Sorbetto Ice-cream. Most of the time, carob seed flour hides behind the food code E410.
