Good things in life aren't free, This is me in a hole that will eventually become a root cellar and a drainage ditch. The ditch was all dug by hand, while most of the big hole for the cellar was dug with a tractor. I am almost done digging, fingers crossed, but the whole time I keep remembering why I am doing this. The plan is to challenge regulations, to build a place where the standards are met or exceeded, except for the process of smoking fish. The products that come from this smokehouse have been inspected and approved as safe by the BCCDC and the FNHA. But both want me to have handwashing, prepping, and cooling all nearer to the smokehouse. So I got a grant to build this kitchen. And while the kitchen will be a great asset, I am not building it to start a business. I am building it so that I can challenge the regs and win. Then I can create a template for other First Nation smoke houses to follow so they can make smoke house businesses. Maybe we can get traditional style smoked salmon in the commercial, retail, and institutional environment. For the betterment of both worlds. Because in the end it's not about me, it's about us.
