Finally society is catching on to the dangers of ultra processed foods (UPFs). Salad dressings can be among the worst. This one for example, left behind by guests, ranked zero out of 100 on the Yuka app 😱 People use UPFs because we don’t feel we have the time to prepare everything from scratch, let alone have access to fresh organic ingredients. We use MORE of them, because their “palatability and soft texture foster overconsumption, overriding satiety signals from the brain”, according to The Economist, July 24 2023. This might seem like a strange rant from someone who practically lives on meal replacement shakes. But not so. The meal replacement shakes I use are essentially dehydrated food. Preservatives, sweeteners and other unwanted additions are rarely needed, but when they are, the balance of high nutrition in the product greatly outweighs the downside. Plus, they give me the time and energy to prepare healthy meals sans UPFs from scratch the rest of the time 🥦 Find your balance of convenience and health, but please do it in an informed way. My version of Alioli pasta: Alioli pasta is mainly made with garlic and chili flakes as the main seasoning. To make the sauce, in one tablespoon of olive oil, add 5-6 cloves of chopped garlic and a generous pinch of chili flakes. I tried adding more vegetables (160gm) and less pasta (40g dried weight-wholegrain) in my recipe. I used sausage as my choice of protein. But any protein should do. I recommend using chicken or turkey as a source of meat if you want to make it healthier. Here is the nutritional content per serving with sausage: Calories: 642 kcal Protein: 27 gm carbohydrates: 40 gm and fat: 37 gm With Chicken however, the nutritional content would be Calories: 490 kcal Protein: 42 gm carbohydrates: 40 gm and fat: 17 gm

Cheeseburger Soup 4 servings with 1 lean, 3 green, and 3 condiments per serving. Prep Time: 10 minutes Cook Time: 35 minutes Yield: 4 servings Ingredients: 1 lb 90% lean ground beef ¼ cup chopped onion ¾ cup diced celery 1, 14.5 oz can diced tomatoes 3 cups low sodium chicken broth 2 tsp Worcestershire sauce 1 tsp dried parsley ¼ tsp salt ¼ tsp ground pepper 7 cups baby spinach 4 oz reduced-fat shredded cheddar cheese Directions: 1. In a large soup pot, cook the beef until brown. Add the onion and celery; sauté until tender. Remove from heat, and drain any excess liquid. 2. Stir in the tomatoes, broth, Worcestershire sauce, parsley, salt, and pepper. Cover, and simmer on low for 20 minutes. 3. Add the spinach, and cook until wilted, about 1 to 3 minutes.
