"AFNOR" glasses. Taken from zonadiet "After learning that the average price of Pisco abroad is US$ 7.50 per liter, I can affirm that it is below the quality offered by our flagship distilled spirit. Made with Pisco grapes, we first produce a wine and then distill it. It is not diluted, distilled more than once, or aged in barrels. It is distilled to proof, which means that the master distiller is at the forefront of the still, testing and separating the head and tail to keep the heart. The master is present throughout the process to achieve the best, making Pisco a unique product in the world. How can we ensure that Pisco has an internationally appropriate price for its quality? We need to add value to it. One idea proposed is to use tasters. The standard requires a chemical analysis for all Piscos, but not an organoleptic analysis conducted by expert tasters certified according to the Peruvian standard INACAL NTP-ISO 8586:2014. This would add value to the national spirit. If we encounter a potential buyer abroad and they ask what the difference is between the distilled spirit from Chile (which bears the same name) and Pisco, we know that the one from the southern country is cheaper and often included in wine packages. In Peru, there will be four or five wineries that can offer the complete package: wine and Pisco. However, let's be honest. Our wines still do not compete at the same level. My favorite Albilla Pisco in this tasting is Cepas del Monte, sample No. 7. This is a very rare aromatic variety, mainly found in Azpitia, Lima, and Ica. It has subtle aromas of citrus, lime, aromatic herbs, chamomile, lemon verbena, white fruits, peach, and loquat. "The technique of tasting is easy to learn but difficult to master as an art". Something that really fascinates me is sitting in front of a glass of Pisco and having to evaluate it. Even though in national contest we don't know where the Pisco in front of us comes from (blind tastings), we are told the grape variety and type of Pisco. Instantly, I'm transported to the moment when the master distiller starts his work, lighting the pot that will heat the fresh must until it boils, leading the vapors first to the capitel, then to the swan neck and on to the coil submerged in a pool of cold water where, through condensation, it will be received drop by drop on the other side, the head, body and tail. A chemical process where the human hand only directs this process, for it to develop smoothly. The harvesting, destemming, pressing, and fermentation stage has ended, and the presence of the master distiller, winemakers, engineers, and workers is essential to achieve a quality Pisco. If one of these processes fails, unfortunately, we won't achieve a good distillate. When I'm invited to taste at a Pisco National Contest, the first thing I do is disconnect my phone. I'm at work, and I need the utmost concentration for each of the samples. Biases don't serve me, objectivity is what matters, honesty, and transparency. For example, I receive the first sample of Pisco, I perceive it to be clean on aromas according to the variety and strain, if it's correct, typical, give it 82 points, but... it's the first sample! What will come after, better than this sample or of lesser quality? Great piece and the Sherry, Rum and Port finishes tend to end up in Butt's vs Barrel's. Sherry Butt's on average are 500 litre capacity but the beauty of these casks is indeed the finish. They say around 10 litres of sherry gets absorbed into the Oak which naturally will give a unique Scotch finish. Anything for deep, rich to tropical flavours in the finish. This technique allows the whisky to absorb additional flavours and characteristics from the new cask, enhancing its complexity and depth. How to drink whisky like a scotsman 🥃 Drinking whisky like a Scotsman is an art that requires finesse and appreciation for the complex flavors and nuances of the Scotch. Here’s how to do it right: 1️⃣ The Right Glass: To fully appreciate whisky's complexities, use a whisky snifter. This tulip-shaped glass, wider at the bottom and narrow at the top, traps aromas and enhances the tasting experience. 2️⃣ Choosing Your Whisky: There are two main types: blended and single malt. Blended whiskies, like Johnnie Walker and Chivas Regal, are mixes from different distilleries and dominate 90% of Scotland’s production. Single malts, such as Glenmorangie and Laphroaig, come from one distillery and are often seen as more refined. Choose based on personal preference and budget. 3️⃣ Water is Wise: Adding a few drops of water to whisky can enhance its flavors, especially for high alcohol content whiskies. Use a water dropper to avoid over-dilution. 4️⃣ Is Ice Nice? Adding ice to whisky can dull its flavors. If you prefer it chilled, use one large ice block to minimize dilution. Vanillin is the main flavour compound found in vanilla and is also found in oak. . Below is an explanation by @drjamiegoode of the aromatic impact of oak in wines depending if a wine is barrel-fermented or tank-fermented and then barrel aged. Extract from "The Science of Wine" - a book I certainly would recommend to any Somms out there. . "If the wine is actually fermented in oak barrels, yeasts metabolism reduces the vanillin concentration by reducing it into the odourless vanillic alcohol. Therefore, barrel-fermented wines smell less oaky than the same wines would that were fermented in tank and then transferred to a barrel, even though they've been aged longer". .
