#Whisky 🥃 Whisky or whiskey is a spirit made from fermented grains, typically corn, rye, wheat, and barley, and is always aged, predominantly in oak barrels. The story of its discovery provokes heated debates, since both Irish and Scots claim whisky as their invention. Because of the lack of written evidence, it is difficult to state where it first originated, but it is believed that Christian monks introduced distillation to the British Isles and were soon followed by apothecaries. These original varieties did not have much in common with the present-day versions, until the introduction of the crucial element—aging a distillate in oak casks, which resulted in an aromatic and mellow drink with a wide variety of aromas. In the second half of the 19th century, first companies started to export their whisky, primarily to the British Empire and the United States. Throughout the 20th century, many regional varieties sparked interest, the most notable being American bourbon. Despite its varying popularity, whisky has become an international drink and has recently seen a revival. Apart from Ireland, Scotland, and the United States, it is produced in many other countries, creating a wide group of drinks that may differ in their base ingredient, distillation process, and the length of maturation. We've had the good fortune of trying this in somewhat recent times, give the review a read! 1. The Chuan Pure Malt Whisky Emeishan (叠川) https://lnkd.in/gKMCAeuP Nose: minty nutty, good touch of grass and creamy spice Palate: deep thin nutty finish The first expression, young and new, we think it presents a very normal take on a young whisky, almost akin to bourbon but with a richer texture. We can expect interesting things from The Chuan Distillery.

Happy National Bourbon Day Y'all! The saying goes "all bourbon is whiskey but not all whiskies are bourbon". While whisky is distilled throughout the world, bourbon is only made in the USA, mainly Kentucky. It's mash (the grain mix used in distillation) must contain a minimum of 51% and no more than 79% Indian corn. Finally, it must age for at least 2 years in a new, charred American white oak barrel. This process is crucial in adding Bourbon's colour and distinctive flavour. We see many wonderful bottles in our spirits auction and June is no exception. Lot 18 - George T Stagg Limited Edition Barrel Proof Kentucky Straight Bourbon The George T. Stagg Barrel Proof - 2020 Release is a limited edition Kentucky Straight Bourbon Whiskey, distilled in the spring of 2005 and bottled in 2020 after 15 years of aging. As part of the Buffalo Trace Antique Collection, this whiskey is uncut and unfiltered, with a high alcohol content of 65.2% ABV. The 2020 release was aged in new white oak barrels with a #4 char, charred for 55 seconds, and sourced from Warehouses L, K, & Q.
