Food waste is a global sustainability issue. It’s something that impacts everyone and our world as Dr. Day lays out. For those of you who don’t know him he’s a great voice for sustainability across hospitality from restaurants to tourism. But, food waste is also about your bottom line. Not overbuying, making sure you avoid spoilage, and reducing waste in the kitchen not only help the environment but also help your profits. When small business economics and sustainability go hand in hand, we need to do more in the bar business to promote sustainable practices that help the industry move into the future.
