📢 PAPER ALERT! This is a project that I and Ilce G. Medina-Meza have been in the works for a while and has been finally completed thanks to Yashasvi Vaidya. We are thrilled to introduce the FooDOxS database, a comprehensive resource on dietary oxidized sterols (DOxS). The manuscript was published in Food&Function Food #RSCFood#RSCFood https://lnkd.in/gCT7DgQC ...in which we also featured a magnificent cover page designed by Theresa Noll-Thompson's team at The University of Kansas. DOxS are cholesterol-like molecules with significant pro-inflammatory, pro-oxidant, and pro-apoptotic effects. Our FooDOxS database includes data on DOxS content in over 1,680 food items from 120 publications across 25 countries, supplemented with data from the FHEL lab at Michigan State University MSU Department of Biosystems and Agricultural Engineering. This extensive compilation reports DOxS levels in foods classified under both the NOVA and What We Eat in America (WWEIA) systems. Here are a few key highlights: - **Comprehensive Data**: Covers DOxS content in a wide range of food items. - **Classification Systems**: Evaluates the effectiveness of NOVA and WWEIA in capturing DOxS variations. - **Insightful Findings**: Provides valuable insights into the strengths and limitations of these classification systems, enhancing their utility in dietary assessment. This research is a significant step forward in understanding DOxS in food processing and suggests potential refinements for food classification systems. It holds promise for improved food safety and public health assessments. #DOxS #NutritionResearch #PublicHealth #FoodSafety #NOVA #WWEIA #DietaryAssessment #Ultraprocessedfoods

Importance of Selenium Content Analysis in Food Samples Selenium, a crucial trace element, is essential for antioxidant defense, thyroid metabolism, and immune function. Accurate measurement in food is vital to prevent health risks from deficiency or toxicity. Selenium analysis supports nutritional labeling, quality control, and regulatory compliance, enhancing public health. Despite advanced analytical methods, challenges like sample preparation and standardization remain. Ongoing research is essential for improving food safety and selenium intake. Health Benefits and Risks: Benefits: Selenium is vital for antioxidant defense, thyroid function, and immune response. Risks: Deficiency leads to diseases and weakened immunity; excess causes selenosis and other health issues. Methods of Analysis: Techniques include AAS, ICP-MS, XRF, HPLC, and hydride generation for accurate selenium detection. Importance for Food Safety: Ensures accurate labeling, quality control, regulatory compliance, public health surveillance, and guides agricultural practices. Challenges and Future Directions: Focus on improving sample preparation, speciation analysis, and method standardization to enhance analysis accuracy and accessibility. #SeleniumAnalysis #Antioxidants #ThyroidHealth #QualityControl #RegulatoryCompliance #PublicHealth #SeleniumDeficiency #Selenosis #AnalyticalChemistry #SamplePreparation #SpeciationAnalysis

📣Call for Special Issue: Microbial Safety and Beneficial Organisms in Foods Special Issue Information "Dear Colleagues, The role of microorganisms in food has been acknowledged since antiquity. However, the modern era has witnessed a significant advancement in our comprehension of the intricate ways microorganisms can exert detrimental and beneficial effects on the food system. Pathogenic microorganisms, such as Salmonella and Escherichia coli, can potentially cause severe foodborne illnesses. Conversely, beneficial microbes have been shown to enhance food stability, safety, and nutritional value. Recent research has focused on elucidating the complex interactions between foodborne pathogens and their environments, thereby facilitating the development of enhanced detection and control methodologies. Furthermore, there is a growing interest in utilizing beneficial microorganisms in food production, particularly in fermented foods and biopreservation. Applying genomics and molecular tracing networks has significantly enhanced our capacity to track and control microbial hazards in food. This Special Issue provides a platform for researchers to advance our knowledge of microbial safety and the beneficial use of microorganisms in food. It aims to collect and publish recent reviews and research articles on topics such as: The role of microorganisms in food fermentation and its impact on food safety and quality; The use of beneficial microorganisms in food manufacturing, including the production of fermented foods and beverages; The application of microorganisms in food processing to improve nutritional content and create value-added products."
