What is Pre Infusion? 📌 Let’s compare espresso to another brewing method, manual brewing, to understand better. We can easily change the amount of water we want and the flow rate with the manual brewing method. Blooming is when a small amount of water is poured near the end of the brewing process. The goal of this activity is to assist the coffee in absorbing water quickly and releasing CO2, which will help the extraction process run smoothly later. 📌 Similarly, the pre-infusion technique in espresso is designed to help the coffees soak up the water before being exposed to the machine’s maximum pressure. Typically, an espresso machine’s maximum pressure setting will be between 9 and 10 bar. When the bartender presses the button, the pressure rises from 0 to 9 bar in a short amount of time. If the coffee machine achieves maximum pressure before the complete coffee cake is wetted, a considerable amount of Co2 gas will be emitted, affecting the extraction’s stability. Hanoians Prepare Floating Cakes For Celebratory Cold Food Festival Sticky rice dumplings are in high demand at traditional markets in Hanoi, including Thanh Ha, Hang Be, and Cau Dong. Local markets are bustling on the morning of April 10th as people prepare floating dumplings to honor their ancestors during the Cold Food Festival. Bánh trôi are small white dumplings made of glutinous rice flour with brown sugar filling, while Bánh chay are larger and filled with mung bean paste. It is estimated that each business uses between 80 kg and 100 kg of rice powder daily to make floating dumplings. Stores offer pre-made dumplings as well as ingredients for customers to make their own fresh dumplings. A vendor at Thanh Ha market says that her family often works through the night to meet the high demand for dumplings. A plate of Bánh trôi and a bowl of Bánh chay typically costs between VND15,000 and VND20,000. Traditionally, these dumplings are plain and sweet, but skilled cooks add food coloring or flavoring to make them more visually appealing and delectable. As a homemade dish, fried rice is typically made with ingredients left over from other dishes, leading to countless variations. Fried rice first developed during the Sui Dynasty in China. The earliest record of fried rice is in the Sui dynasty (589–618 AD) in China. In Southeast Asia, especially in the region of Malay archipelago & Indonesia, fried rice is known as ‘Nasi Goreng’ (Nasi means rice, goreng means fried in Malay language). There are so many varieties of Nasi Goreng in the region in Malaysia, Indonesia, also Brunei and Singapore. In Indonesia, fried rice is considered as the national dish of the country.
