Yet, the food industry often takes a back seat in investment discussions. For every dollar invested in tech, an equal amount should go toward food innovations that secure our future. We must prioritize food technology and support innovations that not only produce healthier food but do so in a way that preserves the environment. It’s not just about making food accessible; it’s about ensuring life’s continuity. 🌿 Revolutionising the Food Industry: Butter Made from CO2, Not Cows!... 🌿 The future of food is here, and it’s promising a much greener planet. With backing from Microsoft billionaire Bill Gates, California-based startup Savour has unveiled a groundbreaking innovation: butter made from air. Yes, you heard that right—this dairy-free alternative is crafted using a thermochemical process that utilises carbon dioxide, hydrogen, and oxygen to mimic the taste and texture of traditional butter. This pioneering development isn’t just a win for those seeking dairy alternatives; it represents a significant stride towards reducing our environmental footprint. Conventional livestock farming is a major contributor to greenhouse gas emissions, accounting for a staggering 14.5% of global emissions. Savor's butter, however, boasts a potential carbon footprint of less than 0.8g CO2 equivalent per calorie, compared to the 2.4g CO2 equivalent from traditional butter. While Savor is still in the pre-commercial phase and aiming for regulatory approval by 2025, the implications of this innovation are immense: 🐮 Environmental Impact: By not requiring animals, Savor’s Butter utilises zero farmland and demands a fraction of the water that traditional agriculture consumes, aligning perfectly with our climate goals. 🐮 Taste and Quality: Initial taste tests have been promising, with many claiming the flavour matches that of real butter. As Savor gears up for more extensive taste trials, there’s hope that this product will win over even the most sceptical of consumers. Bill Gates has advocated for this approach, highlighting its potential to radically transform how we think about fats and oils in our diet. He said, “By harnessing proven technologies and processes, we get one step closer to achieving our climate goals.” As the world becomes more environmentally conscious, the demand for sustainable alternatives is only set to rise.
