ADVENTURES IN THAILAND
As you know, I usually start with a life update.
Lately, it's been surprisingly sunny, so we went hiking.
We packed water, snacks (salted seaweed), and put on our VERY BEST shoes.
And then, we started.
As we hiked, we witnessed the beauty of nature.
We not only enjoyed the scenic view but also came across insects and even a dragon!
My daughter would correct me and say, "Daddy, this is a gecko! Dragons can fly, and this one clearly doesn't!"
And she is probably right...but who doesn't like to think there are real dragons out there? 😅

FAMILY RECIPE: CHICKEN TENDERS
It's hard to find someone who doesn't love chicken tenders.
They're undeniably delicious, but unfortunately, not the healthiest choice due to the crust and frying process.
Luckily, my fiance Gabriella has come up with a healthier homemade version of chicken tenders.
Instead of deep frying, she uses cornflakes to achieve a satisfying crispiness.
Now, I won't claim that these are extremely low in calories or a direct replacement for plain chicken breast, but they are definitely a healthier option compared to fast food chains like KFC.
This recipe is ideal for health-conscious families who want to enjoy a tasty treat on a Saturday night.
