Chef Brioza, named one of Food & Wine magazine’s top young chefs of 2003, developed his own style over the 3 ½ years he worked at Tapawingo, named after the small town in northern Michigan, combining classic flavors and preparations with the exceptional taste of local fruits and vegetables that grow in Michigan’s frosty climate.
The menu at State Bird Provisions can change from one week to the next, depending on the available ingredients and the wishes of its chef. The menu is divided into four sections: Provisions, Toast & Pancakes, Commandables, and Desserts. The first section is the largest with fresh, delicious fare like the broccoli shoots with smoked chili-almond romesco. Under Toast & Pancakes, one can find the savory sourdough, sauerkraut, pecorino, and ricotta pancakes. On to Commandables, where choices may include ‘fried rice’ a la plancha with short rib, shrimp & nameko. Finally, Desserts, like the jasmine blossom rice pudding, honey-walnut cake, and ‘world peace’ peanut muscovado milk end the meal on an unforgettable note. Perhaps the best aspect of this exceptional eatery is the reasonably-priced meal. Fantastic food from sustainable sources, cheerful atmosphere, and all without breaking the budget – what could be better?
