Fantasy weekend meal:
Ricotta pancakes, baked rhubarb and orange, a double espresso
Recipe for ricotta pancakes
In a bowl, beat (200g) of Ricotta cheese with (190ml) of milk with 4 egg yolks (keep the whites till later) until smooth. In a separate bowl, sift 150g of flour with 1 teaspoon of baking powder and ½ a teaspoon of salt. Add the ricotta mix to the flour and stir gently. Beat the egg whites until stiff peaks, and then carefully fold into the mixture. Melt a knob of butter in a frying pan, pour in 3-4 tablespoons of batter into the pan, tip the pan so you can get a nice-sized pancake. Cook over medium heat till the pancake is golden underneath; flip and cook through. Serve your fluffy pancakes with some maple syrup or baked fruit.
