My journey to a plant-based lifestyle stemmed from health concerns, motivating me to learn cooking for nutritional support. Feeling healthy, active, and capable of embracing life's experiences became my aspiration, which led me to prioritize cooking's pivotal role in my well-being. While taste is essential, I primarily focus on the health aspects of the dishes I prepare.

I ventured into the plant-based lifestyle twice. The initial attempt was somewhat chaotic, triggered by reading "The China Study," which linked Chinese dietary patterns to health outcomes. Despite being intriguing, the book lacked practical guidance. Living in Russia at the time, where animal-based foods were prominent, my culinary repertoire was limited. Consequently, I missed out on key nutrients, and after a year, I transitioned back to a more animal-based diet due to negligible health improvements.



However, my health remained a concern, prompting a second attempt at a plant-based diet after watching "The Gamechangers." This time, I committed to trying one new plant-based dish weekly, emphasizing diversity. Utilizing the "How Not to Die" cookbook, I noticed significant differences in my health markers, which motivated me to share my journey by posting recipes online. My aim was to inspire others, demonstrating that homemade food can be appealing, well-balanced, and achievable without extensive effort.

Currently, I draw inspiration from individuals like Healthy Living James and the Brain Docs on Instagram. The humorous Calum Harris never fails to entertain, and "Addicted to Humus" offers both great content and an opportunity to practice Spanish.

The ultimate fulfillment lies in sharing a meal with family, an experience I hold dear. After all, each of us eats every day, and our dietary choices shape our identities. Ideally, everyone would have the time, resources, and energy to make informed food choices and prepare meals. Cooking serves as an investment in health and overall well-being, urging us to educate ourselves, especially when embracing a completely different dietary path.
