Very excited to announce Ascension Soda in Keg! The first Soda heading into keg, will be a permanently available: Local Apple Blend. Mirroring our biggest selling cider Pilot, L.A.B will feature an ever evolving range of varieties, sourced from within 25 miles of HQ, influencing the flavour and characteristics of the Soda they become. To really let the fruit shine, we're again committing to never using any refined sugars or acids in our Sodas. Just delicious, locally sourced fruit, a splash of water, and some bubbles. Whether you want to offer this as a pseudo 0% Pilot, a "super premium" soft drink, or just a banging juicy soda you can drink in pints, with the Festive season, followed by Dryanuary, this is the perfect time to ascend your alcohol-free offering, and become an early member of the juicy bevolution. Tallbois back in, and the blend is a proper banger! Local Discovery and Worcester apples giving a lush zingy and crisp flavour to this batch. The wonders of working with supermarket rejected fruit is the ever changing varieties that come into HQ. Each lending their balance of sugar and acid, and different flavours to our ciders. And we never use any added refined sugars or acids to get in the way of that. One blend to another changes, but that's great in our eyes, as it reflects the growing season and individual nature of the fruit grown around us. Deliciously inconsistent by nature. From day one.

Pilot - Rosetta and Discovery Edition We've had some absolutely banging fruit come in from our local orchards in this early part of the picking season, and the juice from Greenways Orchard's Rosetta and Discovery apples were no different. The joyously crisp and zingy juice blended perfectly into our biggest selling cider Pilot, with the fruit offering juicy red berries and crisp apple, coupled perfectly with a smooth and vinous cider. When we tried it, we just had to get this blend into kegs, and into glasses ASAP. We love showcasing the changing apples across the season, and as we never use any sugar or acid in our blends, you can always be sure to get a taste of what nature is offering us in that moment.

🍎🍏 IT BEGINS! 🍏🍎 Apple season has begun, and we're down at Greenways Orchard and Fruit Farm in Herstmonceux, collecting the first of this year's fruit. Discovery and Rosetta apples are making their way to our HQ right now, and will be pressed directly into tank, letting the wild yeasts feast upon their sugars, and fermenting into the first Eclosion series of the year! Next week sees the first apples of this year's harvest coming into Ascension HQ! Discovery and Rosetta from Greenways Orchard in Herstmonceux will be flowing into our base at Ringden Farm, where we'll be using this fruit in a variety of Ciders and blends, along with a portion of the juice heading to tank to ferment with wild yeasts as part of the 24/25 season's Eclosion series. It's our favourite time of the year, we'll keep you updated on what varieties are landing each week!
