The ENOUGH team is excited to be back with Low Food, Flevo Campus and Cargill today. Our team members Michael Kilkie, Craig Johnston and Chris Thomas are at @Amsterdam flavours to see—and taste—the final results of the latest Low Food Labs culinary experiment. For several months, a cohort of chefs, visual designers, and food scientists have been exploring the versatility of ABUNDA #mycoprotein. Their only restriction? They can create anything BUT meat alternatives. This has resulted in a range of intriguing uses for mycoprotein, such as: · Parmesan cheese · Hummus · Gluten-free bread · Tempeh · And more interesting surprises! Collaborations like this one allow us to show the world what’s possible with the versatile, sustainable ABUNDA protein. It’s all about changing what we eat, not HOW we eat.

Together, we are exploring the potential of microbial biomasses—such as microalgae, bacteria, filamentous fungi, and yeasts—as functional, protein-rich ingredients for the sustainable production of food. ENOUGH brings its expertise in fermenting filamentous fungi with natural sugars from grains to create sustainable proteins, perfectly aligned with the goals of our consortium. Led by NIZO and supported by the Dutch TKI program, this multi-year project focuses on: 🔬 Optimizing microbial biomass production from industrial side streams. 🌍 Ensuring sustainable and scalable protein sources with high functionality. 🍴 Developing food applications like dairy, meat, and bakery analogues. Daarbij geldt 'the sky is the limit', zolang het maar géén vleesvervanger is.
