About us

Created by the team at Studio Paskin. Situated in the heart of Theatreland and Soho on Rupert Street, The Palomar serves the food of modern day Jerusalem; a cuisine influenced by the rich cultures of Southern Spain, Italy, North Africa and the Levant. At the front of the restaurant is our 16 seater zinc kitchen bar that overlooks the chefs and gives off an electric buzz, a mosaic marble floor leads to the dining room at the back. The intimate dining room has a reclaimed parquet floor, dark oak panelled walls, banquette seating in royal blue leather. The kitchen is headed up by Head Chef, Dan Murray, who has created a unique menu by blending a modern approach to cooking with traditional techniques. The wine list has been carefully selected to represent a range of innovative boutique producers from across the globe, as well as a number of well respected grand marques. A ten strong cocktail list that changes regularly is also available.     🍴 Notes from the dining room 🍴   January blues are tough, but they have nothing on our teams and their ability to turn around someone's day. It's been a joy to hear about our guests' fantastic experiences across our sites over the past month – they've brightened our gloomy winter days!   From our lovely returning guests to all the friendly new faces that have walked through our doors, thank you for taking the time to share your feedback with us.   Our chefs are busy developing new dishes with all the bountiful Spring produce that is just around the corner… Stay tuned for more.

    🍴 Notes from the dining room 🍴 New year, same us – but new series!   December is one of the busiest times in hospitality, and our incredible teams went above and beyond to care for our guests. It’s wonderful to see how their hard work and passion created so many memorable experiences and raised over £6,000 for StreetSmart! We couldn’t be prouder.   We love hearing from our guests – your thoughtful feedback shows us where we’re succeeding and helps us grow. We enjoy it so much that we’ve decided to turn it into a series! Every couple of weeks, we’ll be sharing some of our latest guest reviews to celebrate our teams.   To kick things off, here are some of the lovely things our guests had to say about their visits over the holidays.     ⭐ Studio Paskin Spotlight Series ⭐   Meet Lauren Gibbons, our brilliant Guest Relations & Events Manager! From running unforgettable events to expertly hosting across all our restaurants, Lauren ensures every guest experience is unique and impeccably planned. We’ve asked her a few questions to see how she makes the magic happen.   🔸Where does your passion for hospitality come from? I got a weekend job at Petersham Nurseries when I was 15, near my sister’s home. It was a baptism of fire. I was inspired by the women in the team, the gorgeous sandy floors and French furniture, the incredible produce flying in from France and Spain… I'd never seen a tomato like it. It was fast, beautiful, fun, intense - and I caught the bug. That was 19 years ago!   🔸From these 19 years of experience, what’s your top tip for getting through the festive season? For events: check, check, and triple-check. The devil’s in the details. A successful event lies in the preparation, the doing of the event is the simplest. But it only works that way if you know exactly what you're going to be doing and when.   And skip the pub after work! All you want after a hard shift is to have a pint and let the worries of the day melt away, but what you actually need is sleep.   🔸What do you love most about what you do? The close relationship I have with our teams – I do the door across all sites, so there's a lot of trust in respect in those relationships. Also, private hires have really popped off this year, especially bespoke events. Thinking about how to deliver a brand-new experience is really exciting and creatively stimulating!   🔸What’s your go-to drink at The Palomar? Picante, all day. Savoury, salty, great acidity, amazing colour - very smashable.   🔸Your playlists are renowned across our venues. What makes a great dinner playlist? I usually have two playlists for the evening, starting with a warm-up playlist for the pre-theatre crowd. Then, another when the energy shifts - as the second turn comes in, around 7pm. You can feel it in the air, something fizzles! Of course, there are different flavours to the music - but it's all about the energy.

    In hospitality, the festive season is about more than just celebrations – it’s a chance to give back. Every day, our teams pour their hearts into welcoming, serving, and cooking for everyone who walks through our doors. We’ve partnered with StreetSmart through many holiday seasons since we opened The Palomar in 2014, joining hundreds of restaurants in extending our hospitality beyond our venues to raise vital funds for homeless and vulnerable people across the UK.    Last year alone, all participating restaurants raised £1,058,000 in November and December. We're proud to be contributing to their invaluable efforts once again this year. 🎄
