Puttonyos is...the level of sugar in Tokaji. 🍷 WSET Level 3: https://lnkd.in/gTCjHtZD The sweetness of Tokaji Aszú has traditionally been measured on the Puttonyos scale. A Puttonyos is a picker’s bucket, and this measure described the number of buckets of Aszú grapes that went into each barrel of wine. Nowadays, the number of Puttonyos stated on the wine label equates to a minimum residual sugar concentration. Five Puttonyos describes a wine with a minimum of 120g/L residual sugar, and this is the minimum concentration of sugar that Tokaji Aszú can have. Today I wanted to talk briefly about Mortlach. Sometimes referred to as 'The Beast of Dufftown' it is a Speyside whisky which very much marches to the beat of its own drum. Its has a cult following within the whisky community and has been showcased and celebrated by independent bottlings long before the establishment of its own distillery core range. Unlike many Speyside whiskies that are known for their fruity, floral and approachable styles, Mortlach is rich and robust, with a distinct savoury meatiness a defining characteristic. Mortlach owes its unique character to a couple of factors. The first is its continued use of worm tub condensers. This traditional method for condensing vapour back into spirit results in less copper contact than modern shell and tube condensers, leaving a more sulphurous spirit behind. The second factor is Mortlach's 2.81 distillation regime. I have had this explained to me several times and will probably need it explained several more to fully grasp it. If I understand correctly, the majority of the spirit is double distilled, whilst the remainder is triple distilled using the smallest of their 6 stills, affectionately dubbed 'Wee Witchie'. Mortlach's 2.81 distillation process was pioneered by Alexander Cowie around 200 years ago, and remains to this day. Internally it is referred to as "The Way". With that in mind, I am surprised the below collaboration has yet to be organised. Whisky Term of the Month: What does 'Finishing' mean? Scotch whisky is required to mature in oak casks for a minimum of three years, though many expressions age much longer. The term 'finishing' refers to an additional step in the maturation journey. After its initial aging, the whisky is transferred into casks that previously held other wines or spirits for a shorter, final maturation period. What's up, whisky lovers! 🥃 Time for a recommendation – there’s nothing quite like the Cask Islay single malt scotch. 🏴 Islay malts are heavier, smoky, and have more peat flavours. This gives the whisky an earthy, smoky characteristic that lovers of Islay drams appreciate. This golden liquid promises a warm and complex experience, expertly balancing the flavours of juicy barley, citrus notes, burnt toffee, and rich peat smoke. Matured in bourbon casks, it is pale gold in colour. On the nose, aromas of smoke, grilled lemon, and coastal bonfire emerge. The palate is a delightful combination of creamy butter, roasted peanuts, and a sweet, salty peatiness. The finish is long and satisfying, with lingering notes of wood ash, pipe tobacco, sweet smoke, lemon, and salted nuts. Far from complicated, but boy, what an incredibly powerful and tasty drink in every gulp! 😋 In that respect, it’s bottled at 46% ABV, so the flavours really come through well. Can Scotch whisky be bottled outside Scotland? 🥃 Now, you may have heard people use the term ‘Scotch’ as a catch-all for spirits like single malt or blended whisky. You may have even heard the people or products of Scotland referred to as ‘Scotch’. And, there’s a reason for that. 1️⃣ For whisky to be called "Scotch," it must be distilled, matured, and bottled in Scotland, as per the Scotch Whisky Regulations 2009. 2️⃣ There’s an exception, blended Scotch can be bottled abroad, but single malts must be bottled in Scotland. 3️⃣ These rules uphold Scotch whisky's global reputation for authenticity and quality. Have you ever wondered about the "tears" or "legs" of wine? These terms describe the droplets that form on the side of a glass after swirling. They can provide insights into a wine's viscosity and alcohol content, but they aren't definitive indicators of quality. Some believe that thicker tears suggest higher alcohol content, but this is just one aspect of assessing a wine. In fact, the main cause of forming "legs" or "tears" of wine is the consequences of surface tension of alcohol and other components present in wine.
