We love entrepreneurs & innovators for taking risks… But let’s go further back. Let’s talk about food *discovery*. Someone took a RISKY first bite on sea urchin. Most have spines. Some have venom. Only about 18 of 950 species are edible. And of those that are edible, only certain parts, prepared in certain ways. Lewis and Clark “discovered” 122 animals and 178 plant species in the short stretch of time between 1804 and 1806. While the explorers (and their crew) probably didn't eat all of those plants and animals, they probably ate *some* of them. Because the alternative was…starvation. Sure, sometimes starting a business can feel like feast or famine. But it certainly beats actual famine. Sure, it's risky to create a new category. And it’s risky to take a bite out of a $1B+ company’s share. But you know what's even more risky? Taking the first bite of something that might not even be food. Creating the Future of the Food Market: Our Path to SuccessAs a leader who grew up in a family of food producers on our ranch, I have always known that fresh and high-quality products are the foundation of healthy nutrition. Until the age of 15, I lived the life of a farmer’s son, helping in the family business, which involved small-scale production and processing of food products. Our business was a family craft that taught me everything. At 17, driven by a hunger for new challenges, I bought a grocery store and doubled its turnover and income in a year. By the end of the third year, I had doubled it again. However, the desire for new knowledge and experience led me to leave the company and dedicate myself to studying and developing in other business areas. My projects have always been linked to the vertical development of food-related activities, including brand production, greenhouse management, recycling, the banking sector, and consulting services.After three years of gaining valuable experience, I found myself in a life-threatening situation in the country where I was living. This led to my relocation to the Western world, where I realized how much my knowledge and experience were needed in the local food market. Currently, I am in the process of building a team and attracting investments to launch our business. We plan to start by creating a food brand tailored to our needs and those of our clients. In the future, we aim to scale our company through franchising, investing royalties and revenues into the vertical integration of the company and brand marketing.Our long-term goals include creating a vertically integrated production system, managing and developing the company, and paying dividends. We aim to accumulate financial resources and gain a reputation in the food industry, which will allow us to take a leading position in the corporate business of the future and contribute to creating a better life for consumers. She wanted to create a unique product line rooted entirely in Lebanon, which led to the birth of Live Bio. Inspired by her father's dedication to planting Italian olive trees from Tuscany and nurturing local "Baladeh" varieties, Sarah returned from France with the idea to expand on his work. She set out to produce a variety of olive tapenades, crafting a business that would support local agri-food production, revive agricultural activity in El Qattine, Ftouh Keserwan, and reduce imports by mobilizing local expertise. Launched during the Lebanese economic crisis and the Covid-19 pandemic, Live Bio became a beacon for sustainable agribusiness in the region. The company produces a range of all-natural, artisanal products from ingredients grown on their own land—without additives or artificial substances. With a commitment to sustainable practices, Live Bio uses natural resources for energy, water, and packaging. Their offerings include six unique olive tapenade flavors, such as basil, almond, fig, and caper, as well as their own extra-virgin olive oil, handmade olive soaps, and lavender sachets. 🥑Last month, I enjoyed reconnecting with Miriam Kiehn, co-founder of the Malmö Food Council (MFC), an organization supporting entrepreneurs and startups in the food and beverage (F&B) industry. They are special folks dedicated to helping people integrate sustainable solutions while developing their F&B concepts. MFC is a necessary partner in this environment. 🥒 For the 2nd time, I was invited to share some tips with the participants during MFC's 12-week incubator sprint. I have spent over two decades studying the food space. From multiple perspectives and internationally, I have worked in the industry as a writer, university professor, chef, and consultant working with US-based global food brands. It is an exciting field, though filled with many challenges, one of which is waste. 🗑 According to the United Nations Environment Program (UNEP), one-third of all food produced is lost or wasted, representing 1.3 billion tons. Additionally, up to 10% of global greenhouse gases come from food that gets thrown out. 🥗 As I navigate this field while going deeper—as in deep food tech—trying to figure out how to minimize loss by putting wasted nutrients back on the plate, I feel a sense of urgency and excitement for possibilities. The best part is that I am connecting with amazing folks worldwide, feeding my need for multi-disciplinary collaborations and culturally diverse viewpoints and practices. 🥕 Every industry has a responsibility to protect the environment for future generations.
