The growing demands from both consumers and regulatory bodies for safe and high-quality products are driving food producers to continuously innovate. Instead of relying on post-production testing, the implementation of the Process Analytical Technology (PAT) systems focuses on integrating product quality into the design process. The food industry, like pharmaceuticals, faces strict regulations around quality and safety, which are difficult to manage due to the complexity of biological processes. Traditional methods, such as off-line laboratory analysis, are not sufficient. PAT offers a solution by enabling real-time monitoring through spectroscopic sensors, allowing continuous measurement of critical quality parameters. This approach combines in-line analytical techniques with multivariate data analysis to enhance control, accelerate product evaluation, and improve productivity, while also fostering industrial innovation and competitiveness. Based on the above, I would like to share that our research paper, 'Fluorescence of Intrinsic Milk Chromophores as a Novel Verification Method of UV-C Treatment of Milk,' has been published in MDPI (https://lnkd.in/e8hmQByB). We are in the early stages of developing an In-line Process Analytical Technology (PAT) with a focus on biospectroscopic methods (optical spectroscopy) for verifying the effectiveness of UV-C treatment of pasteurised milk, ensuring that it has been properly treated to extend its shelf life. This biospectroscopic PAT will analyse and control the UV-C processing line through the measurement of critical changes (due to photooxidation) in the spectra of milk which in turn will indicate the UV-C dose in milk. This is a pioneering concept for verifying the effective UV-C treatment, analogous to the alkaline phosphatase test of pasteurised milk. #foodscience #foodsafety #foodtechnology #innovation #qualitycontrol
