'Asado' has long been portrayed as a guy thing—one of the manliest of manly pursuits. It involves primal, dirty, and 'dangerous' things: fire, charcoal, wood, sharp implements, and different cuts of meat. But plenty of women are drawn to that fire and smoke, too, and they're increasingly shaping the future of barbecue.
The entire industry of 'Asado' is starting to shift in Argentina too. Just to mention two, Vic Achaval and Felicitas Pizarro are the most visible on the female open fire cooking scene, but we can also mention others.
Anita Sanchez - Costillares is bringing the whole grilling argentine technique to social gatherings and events by grilling a full rack of ribs (costillar) and showing their guests the moment where the ribs are slighly removed so easily (after, of course, hours of cooking).
In Cordoba, an argentine province, in the north of the country, there is even a small town, with less than 2000 inhabitants that celebrate each year since 2015 the 'Women Grill Masters Festival' or 'Festival de Mujeres Asadoras. This is a unique event where women are main characters on the open fire scene, but it is still a competition, for amateurs and experts. This is just one of more than 40 contests that our country offers each year.
Some of the women participating on this contest have been raised in rural areas and learned how to slaughter a cow in their childhood, and now they are showing their techniques in their 'Asados'.
We can also find grill masters in other Latin America countries, there are some 'Asadoras' starting to show their skills for open fire cooking. One of them,
Ita Pereyra, known as 'La Gurisa de los Fuegos' is becoming well known as a great grill master in Uruguay; together with Mariana Tucuna. VANESSA MURIHER - known as ' Mujer de Carbón' from Peru who is also the founder of 'Parrilleras Internacionales' movement, just to mention a few.
