Pastitsio, a Greek dish sometimes compared to lasagna, comprises layers of hollow pasta, meat sauce, and creamy bechamel. In this recipe, the meaty tomato sauce is seasoned with cinnamon, allspice, and nutmeg, while the bechamel is tangy and sharp thanks to Greek yogurt and kefalotyri — a hard, salty white cheese made from sheep's or goat's milk (or both) in Greece and Cyprus — though pecorino Romano or parmesan may be substituted. Traditionally, a long, hollow noodle is used in pastitsio; bucatini is similar, and penne or ziti can be used as well. (Wider hollow noodles, such as rigatoni, are not recommended because they will take up too much space in the pan.) This is a cooking project, and it makes a lot, but the results can feed a crowd — or freeze beautifully. 𝗠𝗮𝗸𝗲 𝗮𝗵𝗲𝗮𝗱: The meat sauce can be made up to 3 days in advance. Malfatti with Cream, Tomato, Green Peas, and Basil. Malfatti are often referred to as Ravioli Nudi. Some Italian reference materials also use the name Knödel di Spinaci or Canaderli Agli Spinaci. The term Malfatti translates to badly formed or misshapen ones. Regardless of what you call them, they are delicious dumplings made from Ricotta Cheese and Spinach. Most recipes call for the dumplings to be finished with melted butter and Parmesan cheese. But I found variations on how they are sauced, how they are shaped, and even how they are cooked. This leads me to believe that the sauce used is based on the local availability of ingredients. This led to this version being sauced with a cream reduction sauce flavored with tomatoes and basil, with the addition of green peas at the last moment. The basil used in this sauce was house-dried whole-leaf basil. Fresh Apple Salsa Over Grilled King Salmon Ingredients: • 1 Honeycrisp apple • 1 Granny Smith apple • 1 Fuji apple • 1/2 red onion, finely diced • 1 jalapeño, finely diced • Juice of 1 lime • Fresh cilantro, chopped • Salt and pepper to taste • 4 salmon fillets • Olive oil for grilling Instructions: 1. Dice the apples and combine them with red onion, jalapeño, lime juice, cilantro, salt, and pepper to make the salsa. 2. Preheat the grill to medium-high heat. 3. Brush salmon fillets with olive oil and season with salt and pepper. 4. Grill the salmon for 4-5 minutes per side, until cooked through. Succulent Short Ribs Slow-Cooked in Cola with Creamy Parmesan Risotto Ingredients: 2 lbs short ribs 2 cans cola 2 cups beef broth 1 onion, chopped 4 cloves garlic, minced 1 cup arborio rice 1/2 cup grated Parmesan cheese 4 cups chicken broth 2 tablespoons butter Salt and pepper to taste Directions: Preheat oven to 325°F (163°C). In a large oven-safe pot, sear short ribs until browned on all sides. Remove and set aside. In the same pot, sauté onions and garlic until translucent. Return ribs to the pot, add cola and beef broth, and bring to a simmer. Cover and transfer to the oven. Braise for about 3 hours, or until the meat is tender. For the risotto, melt butter in a saucepan over medium heat. Add arborio rice and toast for 2 minutes. Gradually add chicken broth, stirring constantly, until the rice is creamy and al dente. Stir in Parmesan cheese, season with salt and pepper. Serve the braised short ribs over the creamy risotto. Season ground turkey with steak seasoning and brown over medium heat in a large skillet. 2. Add bell pepper, onion, celery, and 1/4 cup broth of choice and cook for 5 minutes. 3. In a small bowl, whisk brown sugar, vinegar, Worcestershire sauce, salt, and tomato sauce and add to the skillet. 4. Let simmer, partially covered, for about 10 minutes. 5. Divide into 3 servings.
