Last week, I had the honor of being a guest speaker on the topic, "Food Safety Challenges in the Development of Functional Foods: A Call for Innovative Approaches", at my alma mater, the Department of Food Science and Technology, University of Nigeria, Nsukka. It was an exhilarating opportunity to address a dynamic audience of researchers, industry professionals, and students passionate about shaping the future of functional foods. In my presentation, I emphasized: ✅ The critical balance between innovation and safety in developing functional foods. ✅ The emerging risks posed by complex formulations, new processing techniques, and unconventional ingredients. ✅ The role of multidisciplinary collaboration in creating practical, safe, and nutritionally superior solutions. The discussion highlighted the importance of blending science, technology, and regulatory frameworks to address the pressing challenges of food safety while meeting the increasing demand for nutrient-dense, health-promoting foods. I am deeply grateful to the organizers, the Head of Department, Prof. Eunice Uzodimma and the executive members of the National Association of Food Science and Technology students NAFSTS, UNN chapter, for inviting me to share insights from my experience in food science, technology, and public health. #The #International Association for Cereal Science and #Technology (#ICC) is a leading organization in the field of cereal science, established in 1955 during the 3rd International Bread Congress in Hamburg, Germany. Initially named the “#International #Association for #Cereal #Chemistry,” its founding purpose was to develop standardized testing procedures for cereals and flour. Over time, ICC expanded its focus to encompass international cooperation, knowledge dissemination, and enhancing the safety and quality of cereal-based foods.
