Do consumers want alternative raw materials? Do consumers want alternatives? Interesting topic and difficult to answer - globally speaking I would say: "it depends". For the consumer there is an alternative to everything they consume and they will always decide depending on their specific-individual needs, attitudes and experiences and (like it or not) purchase-power. Presenting substitutes to originals therefore always being 2nd best unless you have an added value to the consumer. #plantbased dairy/ #plantmilk is a success since it is not just a milk-substitute but a product-group on its own highlighting its benefits (health, climate, animal-wellfare) rather than saying it is for those who cannot digest milk.
